Oenoferm® Rouge – Wine Yeast for Fruity, Berry-like Red Wines with Stable Color
Oenoferm® Rouge is a proven clone selection of Oenoferm® Klosterneuburg (yeast strain LW 317-29) and was specially developed for the fermentation of red mashes and red musts. It supports gentle color development and color retention during fermentation.
The fermented wines show a pronounced fruity, berry-like aroma with notes of red berries and cherries, complemented by spicy, nutty components. Oenoferm® Rouge is particularly suitable for fruit-driven, elegant red wine styles.

Recommended Grape Varieties
Pinot Noir, St. Laurent, Frühburgunder, Blauer Zweigelt, Blaufränkisch (Lemberger), Blauer Portugieser, and Blauburger.
Dosage & Application
Dosage: 20–40 g per 100 L of must.
This dosage ensures a reliable fermentation start
and dominance over the natural accompanying flora.
To strengthen yeast vitality, it is recommended to use the biological yeast activator VitaDrive® in the same quantity as the yeast in the rehydration solution. Depending on the nutrient situation of the musts, additional yeast nutrients from the Vitamon® and VitaFerm® families can be used.
Storage
Store vacuum-packed, cool, and dry. Reseal opened packages immediately and use within 2–3 days.
Permitted according to Regulation (EC) 2019/934. Tested for purity and quality. Application within the scope of good cellar practice.
