KELLER MOST-SULFIT® – Ammonium Bisulfite Solution for Must Sulfiting

KELLER MOST-SULFIT® is a 70% ammonium bisulfite solution specially developed for the treatment of grape must and fermenting must. The product is approved as a processing aid for alcoholic fermentation according to EU Regulation 2019/934.

Thanks to its SO2 content, KELLER MOST-SULFIT® effectively acts as an oxidation protector for musts and mashes. At the same time, it inhibits undesirable wild yeasts and microorganisms and, through its nutrient content, supports the targeted propagation of pure culture yeasts.

Its liquid, almost odorless form allows for simple and precise dosing via a measuring cup or dosing pump, and enables integration into continuous cellar processes.

Application

KELLER MOST-SULFIT® is added directly to the must or mash. Dosing is carried out according to legal limits and should be determined in advance by the winery.

Dosing (Guidelines)

  • 7.9 ml/hl corresponds to approx. 50 mg/L SO2
  • Maximum permissible: 28 g/hl or 20 ml/hl

Fresh grapes, grape must, partially fermented must, concentrated grape must, and young wine during alcoholic fermentation.
