LAFFORT ZYMAFLORE® F83 – red wine yeast for fruity and soft red wines.

ZYMAFLORE® F83 by LAFFORT is a selected pure-bred yeast for the production of fruity, soft and floral red wines. The yeast strain was found in the Tuscany isolated and specially selected for the fermentation of Mediterranean red grape varieties.

ZYMAFLORE® F83 is particularly suitable for Sangiovese, Grenache, Carignan, Mourvèdre, Syrah and Merlot. The yeast supports a pronounced formation of ferment flavors after red fruits and ensures a round and supple impression on the palate through a high glycerol production.

Fermentation properties

ZYMAFLORE® F83 has good fermentation kinetics and a short latency phase. For a temperature range of 20 to 30 °C suitable and has an alcohol tolerance of up to 16,5 % vol. on.

Dosage

The recommended dosage is 20–30 g/hl. For prefermentation cold maceration, ZYMAFLORE® F83 can already be used during tank filling at 5 g/hl and then supplemented with a further 15–20 g/hl.

Appropriate grape varieties

ZYMAFLORE® F83 is particularly suitable for Grenache, Carignan, Sangiovese, Mourvèdre, Syrah and Merlot. The yeast was selected in particular to express the typical properties of Mediterranean red wine varieties.
